Colombian gastronomy is certainly not the most renowned in the world, yet it is as rich as Colombia, its people and its traditions. Everything that has to do with culture in Colombia inevitably has a link with its history and the cultural cross-fertilization that took place between the indigenous, African and European populations.
Gastronomy is no different, with many dishes clearly influenced by indigenous cultures (the central role of corn in Colombian cuisine comes to mind, for example). On the Caribbean and Pacific coasts, there is a clear African influence. Of course, the Spanish tradition of the colonial period runs through Colombian gastronomy in many ways.
